Nitrite salt is a finished product that consists of 2 necessary for meat, the main component: sodium nitrite and salt. Accordingly, this product allows you to stabilize and control the amount of nitrite and cooked salt when making sausages, which leads to excellent quality of meat products.

Nitrite is a salted mixture or in a simple folk-nitrite salt, is a conventional salt with a spray on it with a vacuum. The amount of sodium nitrite E250 0,6% to the mass of the mixture. Also contains E536 anti-aging agent in quantity not more than 0,001%.

Also, salt contributes to the preservation of coloring of meat products in thermal processing.

The E250 additive (sodium nitrite) has a synthetic origin and an average level of danger (can cause harm to health). In the food industry is used as a preservative.

When marking an E250 additive on the packaging of products, the following names may also be used: sodium nitrite, E250, nitrite Natria. Sodium nitrite (E250 food additive) is used in the food industry as a color lock and preservative in meat and fish products.

Sodium nitrite chemical formula: nano2. In pure form, the E250 additive is a white hygroscopic crystalline powder with a slightly yellowish shade. Sodium nitrite is good soluble in water. In the air, the E250 additive is slowly oxidized with the formation of sodium nitrate (Nano3).

Industrial use of sodium nitrite began in 1906, when its positive properties were detected in the manufacture of meat products and it was first approved as a food additive. Now, in order to produce sodium nitrite in industrial production, the reaction of sodium compounds to the connections containing nitrite ion in the aquatic environment is applied. The sludge obtained during the reaction is evaporated and cooled. The resulting white powder and is additive-preservative E250.
